Harvest Chicken Casserole

INGREDIENTS
2 tbsp. extra-virgin olive oil, divided, plus more for baking dish
2 lb. boneless skinless chicken breasts
Kosher salt
Freshly ground black pepper
1/2 onion, chopped
2 medium sweet potatoes, peeled and cut into small cubes
1 lb. brussels sprouts, trimmed and quartered
2 cloves garlic, minced
2 tsp. fresh thyme leaves
1 tsp. paprika
1/2 tsp. ground cumin
1/2 c. low-sodium chicken broth, divided
6 c. cooked wild rice
1/2 c. dried cranberries
1/2 c. sliced almonds

DIRECTIONS
Preheat oven to 350° and grease a 9"-x-13" baking dish with oil. In a large, deep skillet over medium-high heat, heat 1 tablespoon oil. Season chicken with salt and pepper. Add chicken to skillet and cook until golden and cooked through, 8 minutes per side. Let rest 10 minutes, then cut into 1" pieces.
Heat another tablespoon oil over medium heat. Add onion, sweet potatoes, Brussels sprouts, garlic, thyme, paprika, and cumin. Season with salt and pepper and cook until softened, 5 minutes. Add 1/4 cup broth, bring to a simmer, and cook, covered, 5 minutes.
Place cooked rice in a large baking dish and season with salt and pepper. Stir in chicken, cranberries, cooked vegetables, and remaining 1/4 cup broth. Top with almonds and bake until dish is hot and almonds are toasted, 15 to 18 minutes.

Easy Spinach-Lentil Soup

INGREDIENTS
2 tbsp. extra-virgin olive oil
2 carrots, peeled and diced
2 celery stalks, diced
1 small onion, diced
3 cloves garlic, minced
2 tsp. cumin
1 tsp. coriander
1/4 tsp. crushed red pepper flakes, plus more if desired
kosher salt
Freshly ground black pepper
1 14-oz. can diced tomatoes, with juices
10 oz. lentils
2 tsp. fresh thyme
4 c. vegetable broth
4 c. baby spinach

DIRECTIONS
In a large pot over medium-high heat, heat olive oil. Add carrots, celery, and onion and cook until beginning to soften, 5 minutes. Add garlic, cumin, coriander, and red pepper flakes, and cook 1 minute, stirring constantly, then season with salt and pepper.
Add tomatoes, lentils, thyme, and vegetable broth and bring to a boil. Reduce heat, cover partially, and simmer until lentils are tender and soup has thickened, 20 minutes. (If most of liquid has been absorbed, add in ½ to 1 cup more water.)
Stir in spinach and continue cooking until wilted, 2 minutes, then season with salt and pepper.

Sweet Potato Salad

INGREDIENTS
3 large sweet potatoes, peeled and cubed (about 2 lb.)
1 small red onion, thinly sliced into half moons
2 tbsp. extra-virgin olive oil
Kosher salt
Freshly ground black pepper
1/2 c. dried cranberries
1/2 c. crumbled feta
1/4 c. freshly chopped parsley
FOR THE DRESSING
2 tbsp. apple cider vinegar
1 tbsp. Dijon mustard
1 tbsp. honey
1/2 tsp. ground cumin
1/4 tsp. ground paprika
1/4 c. extra-virgin olive oil

DIRECTIONS
Preheat oven to 400°. On a large rimmed baking sheet, toss sweet potatoes and red onion in oil then season with salt and pepper.
Distribute them evenly on sheet in a single layer. Bake until tender, about 20 minutes. Let cool for 10 minutes then transfer to a large bowl.
Meanwhile, make dressing: In a small bowl or in a medium liquid measuring cup, whisk together vinegar, mustard, honey, and spices. Gradually pour in oil, whisking constantly until emulsified. Season with salt and pepper.
Toss sweet potatoes with dressing, cranberries, feta, and parsley. Serve warm or at room temperature.

5 Fall Allergy Prevention Tips

5 Fall Allergy Prevention Tips


1. Take shower after you come in from being outside for a while.
Doing this can remove the allergens from skin quicker and hopefully keep you from getting allergy symptoms.

2. Keep the windows closed.
Leaving the windows open lets in that ragweed pollen and can turn your home into a fall allergy zone. It may be worth it to just shut all the windows and keep the outdoor air outside and keep the indoor air clean.

3. Cover yourself.
In the fall, it typically starts to get colder around here anyway, so cover yourself up. Wear long-sleeve shirts and pants to try and prevent those allergens from getting on your skin. Be sure to wash your clothes thoroughly.

4. Change your air filter.
You should be changing your air filter on a regular basis anyway, but this can be very easy to forget to do. Changing your filter can help keep your air clean and prevent allergens from traveling through it.

5. See your doctor if you have questions.
What seems like allergies may not always be just allergies. The best thing you can do is to ask your doctor if you are in doubt. It doesn't hurt to ask.
